2019 Spirit of the Beehive
VINEYARDS: This is a blend of three different vineyards:
Chardonnay from California (Carmel Valley), Chardonnay from Oregon (Columbia Valley) and
Chardonnay and Pinot Noir from Washington (Columbia River Gorge).
WINEMAKING: All lots were fermented in stainless steel and barrel aged for 6 months before
bottling. Secondary fermentation was carried out with honey from a hive kept on a vineyard in
Oregon. Bottled with 23 g/l for tirage. No dosage. We produced 6 barrels.
TASTING NOTES: Yellow Apple, Meyer Lemon, Honeycomb.
WHAT’S IN A NAME? The Spirit of the Beehive is a film by Victor Erice set right after the
Spanish Civil War. It's a beautifully shot film about childhood imagination. Many shots from the
film are bathed in an amber glow as if inside a honeycomb. We wanted those who enjoy this wine
to feel something similar. Using honey for the secondary fermentation of this wine wasn't meant
to define the profile, but to give a subtle, textured glow on the back of the palate.
